Porcupine Meatballs

I probably won’t be making this recipe anytime soon for one reason: hamburger is expensive. However, if beef is cheaper where you live, or maybe you hit an awesome sale and stocked up this is definitely one worth trying! It was always a favorite at our house growing up. Bonus: you can make and freeze the meatballs ahead and even in bulk if you want. A great way to use up meat you got on sale. 😉

Porcupine Meatballs

Makes: 6-8 servings

  • 2 lb Hamburger
  • 2/3 cup uncooked Rice
  • Onion Powder
  • Garlic Powder
  • Pepper
  • 1 cup hot Water
  • 1 family size can Tomato Soup
  • 2 tsp Worcestershire Sauce

Combine hamburger through pepper in a bowl and roll into balls. Mix soup, water and Worcestershire in a 9×13 baking dish then add meatballs. Cover with aluminum foil and bake at 350 degrees for about 45 minutes. Remove foil and bake 15-20 minutes longer.
