Chicken Casserole

For me this is a serious comfort food recipe. Maybe because I grew up on it, or maybe just because I love creamy pasta anything. Whatever it is, this is a great recipe to pull out when it starts to get cold (or just because :P).

Chicken Casserole

Makes: 6-8 servings

  • 1 Chicken Breast, grilled and shredded or chopped
  • 1 can Cream of Mushroom Soup
  • 1 can Cream of Chicken Soup
  • 8 oz Sour Cream
  • Garlic Powder to taste
  • 16 oz Angel Hair or Elbow Noodles
  • 1 ‘sleeve’ Ritz Crackers
  • 1/2 stick Butter, melted

Cook pasta according to package directions. Mix chicken through garlic powder in a bowl. Crush crackers and mix with butter. Place pasta in a 9×13 baking dish, pour chicken mix over it and top with crushed crackers. Bake at 350 degrees for 25-35 minutes or until bubbly at the edges.
