I originally found this recipe in a cookbook I believe was called The One-Armed Chef (although it could have been The One-Armed Cook). It had recipes that were supposed to be so easy you could make them while holding your baby in one arm (please don’t actually try that though. Yikes. :P).
This recipe really is super easy though. I serve it with rice and some sort of frozen veggie; usually broccoli.
Asian Chicken Drumsticks
- 1/2 cup Soy Sauce
- 1/3 cup Brown Sugar
- 3 Cloves Garlic
- 1 (8 oz) can Tomato Sauce
- 12 Drumsticks
Place all ingredients except chicken in a 3 1/2 quart or larger crock pot and mix together. Add chicken and stir to coat. Cover and cook on low for 5 hours.
You can make this with or without the skin on the drumsticks, but I’ll be honest: I like the taste much better skin-on. 🙂
If you don’t need 12 drumsticks to feed your family, then take the opportunity to put together a super easy freezer meal! Just label a quart or gallon sized freezer bag, and place half of each ingredient in there instead of the crock pot. Seal and store in the freezer. Take it out and place it in the fridge to thaw the day before you want to use it. 2 meals for the work of 1!
